Fluffy mini pancakes

For some time I was thinking to improvise and prepare pancakes for breakfast. I found a few different proposals for “bio” pancakes, but finally, I decided to use the products which I have at home and indulge in creativity in the kitchen. The result was incredibly delicious fluffy mini pancakes.

Ingredients

To prepare these sweets I used the following products:

  • 2 eggs
  • Cup ground oats
  • A banana (mashed wrinkled)
  • Vanilla sugar
  • Cinnamon (for flavor)
  • 1/2 teaspoon coconut oil
  • Glass and half unsweetened almond milk

Personally, I use almond milk as a substitute for the animal. You can use oat, rice or some other type of vegetable milk. More about the types of plant milk, their benefits and their application you can read the article on Vegetable based milk.

How to prepare the pancakes

Put all ingredients in a deep bowl. Stir until the yield (as far as possible) a homogeneous mixture. Leave for about 15 minutes to allow oats to absorb the liquid.
